Ingredients (Serves 2)

For the Noodles:

· 200g fresh or dried ramen, udon, or lo mein noodles
· 1 tbsp neutral oil (like vegetable or avocado oil)
· 6–8 garlic cloves, finely minced
· 2–4 red bird’s eye chilies or 1–2 tbsp chili crisp (adjust to heat preference)
· 2 tbsp soy sauce
· 1 tbsp oyster sauce (or vegetarian oyster sauce)
· 1 tsp sesame oil
· 1 tsp sugar or honey
· 2–3 tbsp reserved noodle cooking water
· 2 green onions, thinly sliced
· Handful of fresh cilantro, chopped (optional)

For the Crispy Egg:

· 2 large eggs
· 2 tbsp neutral oil (for frying)
· Salt, to taste

Optional Toppings:

· Toasted sesame seeds
· Lime wedges
· Sliced cucumber or quick-pickled veggies


Instructions

  1. Cook the Noodles:

· Bring a pot of salted water to a boil. Cook noodles according to package directions until al dente.
· Reserve about ½ cup of noodle cooking water, then drain noodles and set aside.

  1. Make the Spicy Garlic Sauce:

· While noodles cook, heat 1 tbsp neutral oil in a large pan or wok over medium heat.
· Add minced garlic and chopped chilies (if using fresh). Sauté for 1–2 minutes until fragrant but not browned.
· Add soy sauce, oyster sauce, sesame oil, and sugar. Stir to combine.
· If using chili crisp instead of fresh chilies, add it now.

  1. Crispy Fried Eggs:

· In a separate non-stick skillet, heat 2 tbsp oil over medium-high heat until shimmering.
· Crack eggs directly into the hot oil. They should sizzle immediately.
· Let cook undisturbed for 1½–2 minutes until edges are golden brown and lacy, whites are set, but yolks are still runny.
· Season with a pinch of salt. Remove and set aside.

  1. Finish the Noodles:

· Add drained noodles to the spicy garlic sauce in the pan.
· Toss quickly over medium heat, adding a splash of reserved noodle water to help the sauce cling to the noodles.
· Stir in sliced green onions and cilantro (if using) and remove from heat.

  1. Serve:

· Divide noodles between two bowls.
· Top each bowl with a crispy fried egg.
· Garnish with extra green onions, sesame seeds, and a lime wedge on the side.
