Classic Baked Apple Fritters

Ingredients:

For the Fritters:

· 2 cups (250g) all-purpose flour
· ⅓ cup (70g) granulated sugar
· 2 tsp baking powder
· 1 tsp ground cinnamon
· ½ tsp ground nutmeg or apple pie spice
· ½ tsp salt
· 2 large eggs, at room temperature
· ¾ cup (180ml) milk (any kind), at room temperature
· 2 tbsp (28g) unsalted butter, melted and slightly cooled
· 2 tsp pure vanilla extract
· 1½ cups (about 2 medium) peeled, cored, and finely diced apples (Granny Smith, Honeycrisp, or Gala)
· Optional: ½ cup chopped walnuts or pecans

For the Cinnamon Sugar Topping (Option 1):

· ¼ cup (50g) granulated sugar
· 1 tsp ground cinnamon
· 3 tbsp (42g) butter, melted (for brushing)

For the Simple Glaze (Option 2):

· 1 cup (120g) powdered sugar
· 2-3 tbsp milk or apple cider
· ½ tsp vanilla extract
· Pinch of salt

Step-by-Step Instructions:

  1. Prep:

· Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat. Lightly grease.
· Peel, core, and finely dice the apples (¼-inch pieces).

  1. Make the Batter:

· In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
· In a separate bowl, whisk the eggs, milk, melted butter, and vanilla until smooth.
· Pour the wet ingredients into the dry ingredients. Stir with a spatula until just combined—do not overmix; a few lumps are fine.
· Gently fold in the diced apples (and nuts, if using).

  1. Shape & Bake:

· Using a large cookie scoop (about ¼ cup) or two spoons, drop mounds of batter onto the prepared sheet, spacing them about 2 inches apart. You should get 10-12 fritters. Shape them into rough circles, but keep them rustic-looking.
· Bake for 16-20 minutes, rotating the pan halfway, until the fritters are puffed, lightly golden, and a toothpick inserted in the center comes out clean.
· Transfer to a wire rack placed over a baking sheet (for glazing).

  1. Finish (Choose Your Topping):

Option A: Cinnamon Sugar

· While fritters are still warm, mix sugar and cinnamon in a shallow bowl.
· Brush each fritter lightly with melted butter, then dip the top in the cinnamon sugar or sprinkle generously over the top.

Option B: Simple Glaze

· In a medium bowl, whisk powdered sugar, 2 tbsp milk, vanilla, and salt until smooth. Add more milk, 1 tsp at a time, until it’s a thick but pourable consistency.
· Drizzle glaze over the cooled fritters with a spoon or fork. Let set for 10 minutes.

Key Success Tips:

· Don’t Overmix: This is the #1 rule for tender fritters. Overmixing develops gluten, leading to toughness.
· Dice Apples Small: This ensures they cook through and distribute evenly.
· Room Temp Ingredients: Eggs and milk at room temperature incorporate more easily, preventing overmixing.
· Even Scooping: Use a cookie scoop for uniform size and even baking.
· Check Early: Ovens vary. Start checking at 16 minutes—overbaking dries them out.

Flavor Variations:

· 🍏 Caramel Apple: Drizzle with warmed caramel sauce instead of glaze.
· 🍯 Maple Cinnamon: Use maple syrup in the glaze instead of milk.
· 🍎 Chunky Applesauce: Replace ½ cup of the milk with unsweetened applesauce for extra apple flavor and moisture.
· 🧀 Cream Cheese Glaze: Blend 2 oz softened cream cheese into the glaze for a tangy twist.
· 🍁 Brown Sugar Pecan: Add ¼ cup brown sugar to the batter and top with candied pecans.

Storage & Serving:

· Best Served: Warm, the same day they are baked.
· Store: Cool completely and store in an airtight container at room temperature for up to 2 days.
· Refresh: Warm in a 300°F oven for 5-8 minutes to revive crispness.
· Freeze: Freeze unglazed fritters on a tray, then transfer to a freezer bag for up to 2 months. Thaw at room temperature and warm in the oven before glazing.

Why Bake Instead of Fry? Baking is easier, safer, and less greasy while still yielding a wonderfully tender, cake-like interior and a slightly crisp exterior. It’s a perfect project for a cozy morning or afternoon baking session.

Enjoy these delightful, homespun treats with a hot cup of coffee or cider!
