Crisp Cabbage and Cucumber Salad

Crisp Cabbage and Cucumber Salad

This salad is the definition of fresh and crunchy! Perfect as a light side, a topping for tacos, or a meal-prep staple, it stays crisp for days and comes together in minutes.

Ingredients

For the Salad:

· ½ small green cabbage, thinly shredded (about 4–5 cups)
· 1 medium English cucumber, thinly sliced or spiralized
· 1 large carrot, shredded or julienned
· ½ small red onion, thinly sliced
· ¼ cup chopped fresh cilantro or parsley (optional)
· 2 tbsp toasted sesame seeds or sunflower seeds

For the Dressing:

· 3 tbsp rice vinegar (or apple cider vinegar)
· 2 tbsp neutral oil (avocado, grapeseed, or light olive oil)
· 1 tbsp soy sauce or tamari
· 1 tbsp honey or maple syrup
· 1 tsp toasted sesame oil
· 1 clove garlic, minced
· ½ tsp ginger, grated
· Salt and pepper to taste

Optional Add-Ins:

· Sliced radishes
· Bell pepper strips
· Crumbled feta or Cotija cheese
· Chopped peanuts or almonds

Instructions

  1. Prepare the Vegetables

· Thinly shred the cabbage using a sharp knife, mandoline, or food processor.
· Slice the cucumber thinly (a mandoline works great for uniform slices).
· Shred the carrot and thinly slice the red onion.
· Place all vegetables in a large bowl.

  1. Make the Dressing

· In a small jar or bowl, whisk together all dressing ingredients until well combined.

  1. Combine

· Pour the dressing over the vegetables and toss thoroughly to coat.
· Let the salad sit for at least 10–15 minutes before serving to allow the flavors to meld and the vegetables to slightly soften while remaining crisp.

  1. Serve

· Just before serving, toss again and sprinkle with toasted sesame seeds and fresh herbs.

Tips for Success

· Keep it crisp: If making ahead, store the dressing separately and toss just before serving.
· Salt wisely: The soy sauce adds saltiness, so taste before adding extra salt.
· Variations: Add shredded chicken, chickpeas, or edamame to make it a full meal.
· Spice it up: Add a pinch of red pepper flakes or a drizzle of sriracha to the dressing.

Why You’ll Love It

· Crunch that lasts: Unlike leafy greens, cabbage stays crisp even after dressing.
· Versatile: Pairs well with grilled meats, fish, tacos, or rice bowls.
· Healthy & refreshing: Packed with fiber, vitamins, and hydration.

Enjoy your vibrant, crunchy, and effortlessly delicious salad! 🥬🥒✨
