Homemade Sweetened Condensed Milk Recipe

Homemade Sweetened Condensed Milk Recipe

Making sweetened condensed milk at home is surprisingly simple, cost-effective, and allows you to control ingredients. Here are two methods: traditional stovetop and a dairy-free version.

Stovetop Version (Classic)

Ingredients:

· 2 cups whole milk (full-fat for best results)
· 1 cup granulated sugar
· 3 tablespoons unsalted butter
· 1 teaspoon vanilla extract (optional, for flavor)
· Pinch of salt (enhances flavor)

Instructions:

  1. Combine & Simmer: In a heavy-bottomed saucepan, combine milk and sugar. Heat over medium-low heat, stirring constantly until the sugar completely dissolves.
  2. Slow Cook: Reduce heat to the lowest setting. Simmer gently, stirring frequently (every 5-10 minutes) for about 45-60 minutes. Do not boil vigorously, as this can cause the milk to curdle or develop a grainy texture.
  3. Watch for Thickening: The mixture is ready when it has reduced by almost half, coats the back of a spoon thickly, and leaves a clear path when you run your finger across it. It will thicken more as it cools.
  4. Finish & Cool: Remove from heat. Stir in butter, vanilla extract (if using), and a pinch of salt until fully incorporated.
  5. Store: Let cool completely. It will continue to thicken. Transfer to a clean jar. It keeps in the refrigerator for up to 2 weeks. It may thicken considerably when chilled; let it sit at room temperature or warm gently to return to a pourable consistency.

Quick Microwave Version (15 Minutes)

Ingredients:

· 1/2 cup boiling water
· 1 cup powdered milk (full-fat)
· 2/3 cup granulated sugar
· 3 tablespoons melted butter
· 1 teaspoon vanilla extract

Instructions:

  1. Combine all ingredients in a blender.
  2. Blend on high for 1-2 minutes until completely smooth, creamy, and the sugar has dissolved.
  3. Use immediately in recipes, or store covered in the refrigerator. This version is best used right away.

Vegan/Dairy-Free Version

Ingredients:

· 1 can (13.5 oz / 400 ml) full-fat coconut milk
· 1/2 cup granulated sugar, coconut sugar, or maple syrup (adjust to taste)
· 1 tablespoon coconut oil or vegan butter (optional, for richness)
· 1/4 teaspoon vanilla extract (optional)

Instructions:

  1. Whisk coconut milk and sugar together in a saucepan over medium heat until the sugar dissolves.
  2. Reduce heat to low and simmer for 45-60 minutes, stirring often, until reduced by half and thickened.
  3. Stir in coconut oil and vanilla if using. Cool completely. It will have a slight coconut flavor.

Pro Tips & Troubleshooting

· Low and Slow is Key: The most common mistake is cooking over too high heat, which can scorch the milk or cause it to curdle.
· Stir Frequently: This prevents a skin from forming and ensures even cooking.
· It Thickens as it Cools: Don’t overcook it trying to get a super thick consistency in the pan. Aim for a creamy, syrup-like texture off the heat.
· For Caramelized “Dulce de Leche”: Pour your finished sweetened condensed milk into a glass jar. Place the sealed jar in a slow cooker or pot of water, ensuring water covers the jar by 2 inches. Cook on low for 8-10 hours. Let cool completely in the water before opening.
· Storage: Always store homemade versions in the refrigerator. They lack the preservatives of canned versions.
· Yield: These recipes make the equivalent of approximately 1 standard 14 oz can.

Why Make It at Home?

· Control Sweetness: Adjust sugar to your preference.
· Dairy-Free Needs: Easily accommodate allergies or dietary preferences.
· No Additives: Avoid stabilizers and preservatives found in some commercial brands.
· Pantry Rescue: Make it when you don’t have a can on hand.

Enjoy using your homemade creation in coffee, baking (like key lime pie or magic cookie bars), drizzling over fruit, or simply by the spoonful
