Classic Three-Envelope Roast Recipe

Classic Three-Envelope Roast (Mississippi Pot Roast-Inspired)

This is the legendary, ultra-tender, flavor-packed roast that took the internet by storm. It’s famous for requiring just 5 ingredients and almost zero active effort. The result is a savory, tangy, slightly peppery roast that falls apart with a fork.

Ingredients

· 1 (3-4 lb) chuck roast, rump roast, or pork roast (chuck is traditional & ideal)
· 1 packet (0.7 oz) dry ranch dressing mix
· 1 packet (0.87 oz) dry au jus gravy mix
· 1 packet (0.6 oz) dry Italian dressing mix
· ½ cup (1 stick) unsalted butter, cut into tablespoons
· 5-8 pepperoncini peppers (plus 2-3 tbsp juice from the jar)
· Optional: 1 cup beef broth or water (see Pro Tips)

Instructions

  1. Prep:

· Place the roast in the bowl of a slow cooker (4-quart or larger). Pat it dry.
· Sprinkle the ranch, au jus, and Italian dressing packets evenly over the top of the roast.
· Place the pats of butter on and around the roast.
· Scatter the pepperoncini peppers around (and on top) of the roast. Pour the pepperoncini juice over everything.

  1. Cook:

· Slow Cooker Method: Cover and cook on LOW for 8 hours or on HIGH for 5-6 hours. The roast is done when it is fork-tender and shreds easily.
· Instant Pot/Pressure Cooker Method: Add optional 1 cup broth/water. Cook on HIGH pressure for 60-80 minutes (15-20 min per lb), followed by a full natural pressure release (about 15-20 min).

  1. Serve:

· Remove the roast to a platter or bowl. Shred with two forks.
· For Gravy: Skim excess fat from the juices in the pot. You can serve the juices as-is, or for a thicker gravy, whisk 1-2 tbsp cornstarch with 2 tbsp cold water and stir into the hot juices. Cook on sauté/low until thickened.
· Spoon the juices and peppers over the shredded meat.

Essential Pro Tips & FAQs:

· The Roast Matters: Chuck roast is the king here. Its marbling melts during the long cook, making it incredibly tender and flavorful.
· No Peek Rule: Resist lifting the lid during slow cooking. Each peek releases heat and steam, adding cooking time.
· Butter is Key: It creates a rich, unctuous sauce. Use unsalted to control sodium.
· Pepperoncini are Non-Negotiable: They provide the signature tangy, mild heat. Don’t skip them or their juice!
· Salty? The seasoning packets are salty. Do not add extra salt. Using unsalted butter and low-sodium broth (if used) helps balance it.
· Not Tender Enough? It needs more time. Continue cooking on low in 30-minute increments until it shreds effortlessly.

Popular Variations:

· Add Veggies: Add halved baby potatoes, thick carrot chunks, and onion wedges for a complete one-pot meal (add during the last 2-3 hours on low).
· Creamy Version: Stir in 4 oz of cream cheese during the last 30 minutes of cooking for a richer, creamy sauce.
· Pork Version: Use a pork shoulder or butt roast. Excellent for pulled pork sandwiches.
· Lighter Version: Reduce butter to ¼ cup (half a stick). The result is still fantastic.

What to Serve With It:

· Classic: Over a pile of creamy mashed potatoes or buttery egg noodles to soak up the juices.
· For Sandwiches: Pile on toasted brioche buns with a slice of provolone cheese (broil to melt).
· Low-Carb: Serve with cauliflower mash or on its own with a side of roasted green beans.
· Easy Sides: Steamed rice, a simple garden salad, or crusty bread.

Enjoy the easiest, most requested pot roast of your life! The simplicity is genius, and the flavor is deeply satisfying.
