Ingredients:

· Optional: ½ cup corn kernels or black beans
· For garnish: Shredded cheddar or Monterey Jack cheese, fresh parsley or chives, sour cream


Instructions:

  1. Brown the Meat & Sauté Vegetables:

· In a large Dutch oven or soup pot, heat oil over medium-high heat.
· Add ground beef and onion. Cook, breaking up the meat, until the beef is browned and the onion is soft (about 7-8 minutes). Drain excess fat if desired.
· Add the diced bell peppers and garlic. Cook for another 3-4 minutes until fragrant.

  1. Build the Soup:

· Stir in the beef broth, crushed tomatoes, diced tomatoes, tomato paste, Worcestershire sauce, Italian seasoning, paprika, oregano, 1 tsp salt, and ½ tsp pepper.
· Bring to a boil, then reduce heat to low and simmer, uncovered, for 20 minutes to meld flavors.

  1. Add Rice & Finish:

· Stir in the uncooked rice. Continue to simmer, uncovered, for 18-25 minutes, stirring occasionally, until the rice is tender.

· If the soup becomes too thick, add a splash of water or broth.
