Ingredients

Instructions

Step 1: Make the Chicken Salad

  1. In a medium bowl, combine chicken, celery, and onion.
  2. In a small bowl, whisk together mayonnaise, yogurt (if using), mustard, lemon juice, dill, salt, and pepper.
  3. Pour dressing over chicken mixture and stir gently until combined.
  4. Fold in cranberries/grapes and nuts if using.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.

Step 2: Prepare Croissants

  1. If using packaged mini croissants, slice each in half horizontally, being careful not to cut all the way through—leave a “hinge” so they open like a book.
  2. If you prefer them extra crisp, warm split croissants in a 300°F (150°C) oven for 3–5 minutes before filling. Let cool slightly.

Step 3: Assemble

  1. Place a small piece of butter lettuce inside each croissant if desired.
