For the Roll-Ups:
· 8 slices soft white or wheat sandwich bread, crusts removed
· 2 large eggs
· 2 tbsp milk or half-and-half
· 1 tsp vanilla extract
· 2 tbsp unsalted butter (for frying)
For the Cinnamon Sugar Coating:
· ¼ cup granulated sugar
· 1 tsp ground cinnamon
· 2 tbsp melted butter (optional, for brushing)
For Serving (Optional):
· Maple syrup
· Powdered sugar for dusting
· Fruit preserves or Nutella (as alternative fillings)
Instructions
Step 1: Prepare the Filling
- In a small bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth.
Step 2: Flatten and Fill the Bread
- Using a rolling pin, flatten each slice of bread until thin and pliable.
- Spread about 1 tablespoon of cream cheese mixture evenly over each slice.
- Tightly roll up each slice, pressing gently to seal.
Step 3: Dip in Egg Mixture
- In a shallow dish, whisk together eggs, milk, and vanilla.
- Dip each bread roll-up in the egg mixture, coating all sides. Let excess drip off.
Step 4: Pan-Fry
- In a large skillet over medium heat, melt butter.
- Place roll-ups seam-side down in the skillet. Cook for 2–3 minutes per side, turning until golden brown on all sides.
- Remove and let drain on a paper towel–lined plate for a minute.
Step 5: Coat with Cinnamon Sugar
- In a shallow bowl, mix sugar and cinnamon.
- While still warm, roll each fried roll-up in cinnamon sugar until evenly coated. For extra richness, brush with melted butter before rolling in sugar.
Step 6: Serve
- Serve immediately with maple syrup for dipping or dusted with powdered sugar.
Variations:
· Fruit-filled: Substitute cream cheese with mashed banana, strawberry jam, or apple pie filling.
· Chocolate: Spread Nutella or chocolate hazelnut spread before rolling.
· Savory version: Fill with scrambled eggs and shredded cheese, omit sugar coating, and serve with salsa.
Tips:
· Use fresh, soft bread for easier rolling (day-old bread can tear).
· Don’t overfill—too much filling will ooze out while frying.
· Keep cooked roll-ups warm in a 200°F (95°C) oven while finishing batches.
· For a make-ahead option, assemble rolls the night before and store covered in the fridge; dip and fry in the morning.
