Crispy Pan-Fried Potatoes with Onions

Crispy Pan-Fried Potatoes with Onions

This classic, hearty side dish features golden, crispy potatoes and sweet caramelized onions cooked in a single skillet. Simple, savory, and deeply satisfying—perfect with eggs, roasted meats, or as a stand-alone comfort meal.

Ingredients

· 2 lbs (900g) russet or Yukon Gold potatoes, peeled and cut into ½-inch cubes
· 1 large yellow onion, thinly sliced
· 3–4 tbsp vegetable oil, divided (or bacon fat for extra flavor)
· 2 tbsp unsalted butter
· 1 tsp paprika (optional)
· 1 tsp garlic powder (optional)
· Salt and freshly ground black pepper to taste
· 2 tbsp fresh parsley, chopped (for garnish)

Instructions

Step 1: Par-cook the Potatoes (for extra crispiness)

  1. Place potato cubes in a pot, cover with cold water, and add 1 tsp salt.
  2. Bring to a boil, then reduce heat and simmer for 5–7 minutes until just tender but not falling apart.
  3. Drain well and spread on a towel or paper towels to dry thoroughly.

Step 2: Cook Onions

  1. Heat 1 tbsp oil in a large skillet (preferably cast iron or non-stick) over medium heat.
  2. Add sliced onions and cook, stirring occasionally, for 8–10 minutes until soft and caramelized.
  3. Transfer onions to a plate and set aside.

Step 3: Fry the Potatoes

  1. In the same skillet, add remaining oil and butter over medium-high heat.
  2. Once hot, add potatoes in a single layer (work in batches if needed to avoid crowding).
  3. Let cook undisturbed for 4–5 minutes until golden brown on one side, then flip and continue cooking until crispy all over, about 10–12 minutes total.
  4. Season with salt, pepper, paprika, and garlic powder (if using) during the last few minutes of cooking.

Step 4: Combine and Serve

  1. Return caramelized onions to the skillet with potatoes and toss gently to combine.
  2. Cook together for 1–2 minutes to reheat onions and let flavors meld.
  3. Garnish with fresh parsley and serve hot.

Tips for Perfect Crispy Potatoes:

· Dry potatoes thoroughly after boiling or rinsing—moisture is the enemy of crispiness.
· Don’t overcrowd the pan; this ensures even browning and prevents steaming.
· Use a heavy-bottomed skillet for even heat distribution and better browning.
· Add a lid briefly after flipping if you want softer potatoes; leave uncovered for maximum crispness.

Variations:

· Breakfast-style: Add diced bell peppers and crumbled cooked sausage or bacon.
· Herb-garlic: Stir in 2–3 minced garlic cloves during the last minute of cooking, along with fresh thyme or rosemary.
· Spicy: Add a pinch of cayenne or smoked paprika with the seasonings.
· Cheesy: Sprinkle shredded cheddar or Parmesan over the top during the last minute and cover until melted.

Serving Ideas:

· Serve alongside fried or scrambled eggs for a hearty breakfast.
· Pair with grilled steak, chicken, or sausages.
· Top with a fried egg and hot sauce for a simple meal.
· Enjoy as a side to meatloaf or roasted chicken.
