Mini Everything Bagels
These bite-sized everything bagels deliver that classic chewy texture and savory topping in a perfect snack-sized package. Great for breakfast, brunch boards, or party appetizers.
Ingredients
For the Dough:
· 1 cup warm water (110°F/43°C)
· 2 tsp active dry yeast
· 2 tbsp honey or barley malt syrup
· 2 ½ cups bread flour (plus extra for dusting)
· 1 tsp salt
· 1 tbsp vegetable oil
For the Boiling Water:
· 8 cups water
· 2 tbsp honey or barley malt syrup
· 1 tbsp baking soda
For the Everything Topping:
· 2 tbsp sesame seeds
· 2 tbsp poppy seeds
· 1 tbsp dried minced garlic
· 1 tbsp dried minced onion
· 1 tbsp coarse salt (or flaky sea salt)
· 1 tsp caraway seeds (optional)
· 1 egg white, beaten with 1 tbsp water (for egg wash)
Instructions
- Activate Yeast: In a small bowl, combine warm water, yeast, and honey. Let sit for 5-10 minutes until foamy.
- Make Dough: In a large bowl or stand mixer fitted with a dough hook, mix flour and salt. Add yeast mixture and oil. Mix until dough comes together, then knead for 8-10 minutes until smooth and elastic. Dough should be firm but pliable.
- First Rise: Place dough in a lightly oiled bowl, cover with a damp towel, and let rise in a warm place for 1 hour or until doubled in size.
- Shape Mini Bagels: Punch down dough. Divide into 16 equal pieces (about 1.5 oz each). Roll each piece into a smooth ball. Use your thumb to poke a hole through the center, then gently stretch to form a 1.5-inch ring. Place on a parchment-lined baking sheet.
- Second Rise: Cover shaped bagels with a damp towel and let rise for 30 minutes.
- Preheat and Prep: Preheat oven to 425°F (220°C). Bring water, honey, and baking soda to a boil in a large pot. Mix all everything topping ingredients in a shallow dish.
- Boil Bagels: Boil bagels in batches (3-4 at a time) for 30 seconds per side. Remove with a slotted spoon and place back on baking sheet.
- Add Topping: Brush boiled bagels with egg wash. Dip top-side into everything seasoning mix, pressing gently to adhere. Return to baking sheet, seeded side up.
- Bake: Bake for 15-18 minutes until golden brown. Let cool on a wire rack.
